Day 1: Rabokki

Today is day 1 of the BoricuKorean Diet and so far so good. We(sister and I) decided that I should start my diet with a BANG! so we did our favorite korean food, Raboki(spicy dukbokki with ramyun). Tteokbokki or dukbokki are sticky rice cakes mostly found in the form of 'sorullitos'. They are extremely delicious, specially mixed with ramyun.

I was able to do this with my korean products that I bought from Ktown NYC. Asian markets in PR don't sell korean products, therefore, be creative with what you have in your pantry. If you want to make homemade sticky rice cakes, watch this video below. It's a long process but SO worth it.

Now, let's get down to business! RECIPE TIME!

Ingredients:
1 cup of carrots
1 yellow onion
3 cups of water
chicken flavor ramyun
2 tbsp of red pepper paste
2 1/2 tbsp of sugar
3 cups of sticky rice cake

Directions:
1. Chop carrots and onions and sauteƩ with spray pam(less fat and calories) in medium heat.

2. After browning veggies, add 3 cups of water and the chicken flavor from the ramyun. Turn heat to high until boiled.


3. While the veggies are boiling, mix red pepper paste with sugar in a separate bowl.

 4. Add ramyun and dukbokki(sticky rice cakes). Wail 'til the sauce has thickened and dukbokki and ramyun are soft.

5. Finally, IT'S GO TIME!  Jalmukesumneda(I will eat well)!

Try it! It's the perfect combo between sweet and spicy(but mostly spicy). If you don't have red pepper paste, substitute for red curry paste. It gives the dish a thai flavor but still yummy. You can add scallions as a finishing touch.
